It’s also just been too damn hot around here lately. In PNW we piss and moan about the heat because it’s so….unnatural. Similar to our pissing and moaning about snow, we’re simply not used to it. Air conditioning is typically unnecessary in these parts. But it hit 103 degrees last week (a record for Seattle, though it was 107 where I work) and I couldn’t bring myself to apply heat to basic ingredients in order to prepare a meal.
Until last night. I finally broke down and made something dinner-like, because the temperatures dropped about 10-15 degrees and I was able to turn on a heat source in the house without feeling like I had suddenly landed on the surface of the sun. However, I still couldn’t stand it for long, so it’s nothing fancy.
Asian food is my favorite. We have more sushi restaurants in my town than pizza joints. Thai places are a close second. So I rarely have to cook when I get a craving for it. But I really, really wanted to make a rice noodle stir fry thingy, so I did.
The noodles are the same kind they use for pad thai, cuz they’re chewy and slurpy and I love them. There’s also baked tofu in there, baby bok choy, zucchini, red onions, and mushrooms. Plus hoisin, lime juice and a touch of sweet chili sauce, then topped with cilantro, red chili flakes, and sesame seeds.
See, it’s not special. But I cooked something. And that’s what counts.

I can't believe you let that naggard Peter guilt you into posting something. I only updated mine because my friends were getting depressed seeing the same old "Dear Anonymous" bullshit on mine.
